Tired of the ol’ soup?

It’s true, many of us delve into the world of soup recipes during winter. Conjuring up the perfect soup can also be a rather long and tedious process, especially after a day’s work. So here is a delicious Thai chicken broth recipe that takes less than thirty minutes to make!


• 1 L of chicken stock
• 1 can of coconut cream
• 1 can of coconut milk
• 4 Chicken breasts
• 12 Mange tout
• 5cm piece of fresh ginger
• 3 dried lime leaves
• 4 Tbsp of fish sauce
• 2 limes
• 1 bunch of fresh coriander (+- 50grm)
• 2 red chillies
• 1 cup roughly chopped oyster mushrooms


Heat the stock in a medium size pot. Cut the chicken into bite size pieces, and add that to the stock. Now you are going to slice the mange tout into three, chop the chillies, and peel the ginger.

Grate the ginger (with fine side), and along with the items you just chopped and sliced add it to the stock, followed by the mushrooms. Role the limes with the palm of your hand on a counter top. This will ensure you get more juice from the limes.

Cut them in half and squeeze the juice into your broth. Add your fish sauce, and after roughly chopping the coriander, you can add that as well. Lastly, add the coconut cream and milk. If you wish you can replace the coconut cream with an additional can of coconut milk. To give the broth a bit more balance you can also add two teaspoons of sugar.

Remember to taste your food before serving, and add seasoning accordingly. Easy as Thai!

Tip of the month

When buying olives, buy kalamata olives and flavour them yourself! Simply place the olives and the brine into a sterilised jar. Add some fresh rosemary and peeled garlic cloves and tadaaah!

You just need to add enough olive oil afterwards so the top is covered to seal it so to speak. It lasts for months!
